Are you looking for a healthy and tasty evening snack for kids? How about coconut and oats macaroons? If your kids hate oats, then this is a good idea of adding oats in their daily diet. A cup of oatmeal has 160 calories, six grams of protein and four grams of fibre. Many foods that kids love are not exactly rich in fibre, so loading them up with a bowl of oatmeal in the morning can help them to meet the daily requirement of fibre.
Also If you are a coconut lover like me than you will definitely enjoy baking this easy coconut oats macaroons soft and chewy on the inside and crispy golden brown from outside dipped in the melted chocolate and garnished with chocolate syrup… Are you drooling 🤤 reading this? Yeah I know you are. So here you go..
Ingredients :
You will need;
1.5 cups of shredded/grated coconut
1cup whole or instant oats
1/2 cup of sugar (adjust according to your taste and health)
1tsp vanilla essence
2 egg whites (room temperature)
Pinch of salt
Method:
Preheat the oven
Step 1: Beat the eggs till it becomes little frothy.
Step 2: In a medium bowl, Add sugar, vanilla essence and salt, beat it again with the help of hand blender or mixer or just with a fork.
Step 3: Add coconut and oats mix well and fold in the mixture using rubber spatula.
Step 4: Line the baking tray with a parchment paper. (I used silicon Ikea baking mat), take a small portion in an ice cream scooper and place the macaroons on the baking tray carefully, keep a distance of one inch or so in between each macaroon.
Step 5: Bake it for 160c for 18-20 minutes or until it’s golden brown from top and sides.
Step 6 : Let it cool for few minutes on the wire rack.
Dip it in the chocolate syrup and Enjoy !!
